Blueberry muffins surprisingly ended up being a favorite muffin of mine!
The reason it's surprising is I did not like blueberries!
It took my son loving blueberry pancakes for me to even try blueberry muffins which I ended up perfecting over the years both my blueberry pancakes and my blueberry muffins!
Some tips I've learned over the years is absolutely add the lemon zest it does make a difference I don't suggest on top though.
Frozen blueberries have been something that I've used over the years! I find when I work with my batter, frozen blueberries doesn't make your batter too thin. If your batter is looking a little too thin, for either your blueberry pancakes or your blueberry muffins, then you just add a little bit of flour make sure that you're not making it too thick, by adding a little bit of flour like a teaspoon of flour at a time.
An easy crumble for the top of your blueberry muffin is butter flour and granulated sugar and work it kind of like you do for a banana bread topping, just use granulated sugar instead
You can also use Sugar in the Raw on the top, but I would suggest putting that on after you bake it!
